Vegan Chick’n Parm

Makes 8 Sandwiches⠀
2 7.1 oz bags shredded Mozzarella, at room temp for better melting! ⠀
8 Vegan breaded chick’n patties, cooked⠀
8 vegan burger buns⠀
¾ cup vegan butter, melted⠀
2 cups marinara sauce⠀
2 tbs dried Italian seasoning⠀
1 cup + 2 tbs grated vegan parmesan⠀
TIP: spread Daiya cheese on a large plate and microwave for 10 seconds at a time, mixing in between, for a total of 30 seconds to get it warmed up for better melting in the oven!⠀
Preheat the broiler and arrange an oven rack in the middle level of the oven. Split the entire pack of dinner rolls in half horizontally, if possible, keep the top of the buns attached to each other and the bottoms of the buns attached to each other for the “pull-apart” effect. If that’s not possible don’t worry, these will still be delicious!⠀
Put the top and bottom halves cut-side up on a baking sheet. Brush cut-side with melted butter, reserving 2 tbs for later. Broil until toasted, 1 to 3 minutes. Keep a close eye on them, they will burn very quickly!⠀
Turn off the broiler and preheat the oven to 400 degrees. Spread half the mozzarella on the bottom buns, top with chick’n patties, marinara, 1 cup vegan parmesan cheese, then the remaining Daiya Mozzarella cheese, lastly, place the top buns on top. ⠀
Brush the tops of the buns with remaining vegan butter and sprinkle with remaining vegan parmesan and Italian seasoning. ⠀
Bake 12-15 minutes⠀
